The weekly routine is back this week with schedules aplenty as school summer break is over. Time to plan and ease your way into tasty weeknight dinners.
I just love chorizo and after not having it in the house for a few months I decided it was time to have this tasty sausage back int he fridge.
I am sharing this recipe from Donna Hay which I recently cooked this week. Delicious!
Donna Hay's Cheats Chorizo Paella (my version)
1 tablespoon olive oil
2 cloves garlic, sliced
1 onion, diced
1 chorizo sausage, sliced
1 cup long grain rice
1 cup chicken stock
1 x 400g can crushed tomatoes
1. Heat the oil in a large pan over high heat. Add the garlic, onion and chorizo. Cook for 4-5 minutes or until browned.
2. Add the rice, stock and tomato, cover and reduce heat to low and cook for a further 15 minutes or until rice is tender and stock is absorbed.
